V. Course Description: 

Integrates best practice techniques in nutrition counseling and education, including professional issues for the Registered Dietitian Nutritionist.

Note(s): Applied Learning designated course.

VI. Detailed Description of Content of the Course:

The purpose of this course is to integrate theory and skills in the practice of nutrition counseling and to present principles of teaching and learning in various settings. Professional issues include inter-professional collaboration and business basics for the practicing Registered Dietitian Nutritionist. 

Topics include:

  • Evidenced based exercise recommendations
  • Nutrition counseling for eating disorders
  • Principles and theories of learning
  • Plan, implement and evaluate learning
  • Effective oral presentations
  • Instructional media
  • Group learning 
  • Personality style
  • Nutrition counseling philosophy
  • Business requirements
  • Payment systems
  • Documentation

VI. Detailed Description of Conduct of Course:

Course instruction strategies may include, but will not be limited to readings, lecture, discussion, case presentations, live and video-recorded demonstrations, guest speakers and supervised nutrition counseling sessions. 

VII. Goals and Objectives of the Course:

Successful completion of this course will enable the student to:

  1. Plan, conduct and document nutrition counseling sessions according to the Nutrition Care Process 
  2. Demonstrate effective communication and nutrition counseling skills 
  3. Design effective nutrition education methods for teaching basic or in-depth knowledge and skills
  4. Cite recommendations from the Physical Activity Guidelines for Americans 
  5. Cite characteristics of disordered eating patterns, various levels of treatment and the basic role and strategies for the RDN
  6. Distinguish the role of the RDN and other professionals in settings where inter-professional collaboration is considered best practice 
  7. Describe basic legal considerations and business procedures important for nutrition entrepreneurs
  8. Describe the steps required to bill insurance for nutrition services
  9. Students critically reflect on their knowledge, use of clinical skills, and classroom experiences.

VIII. Assessment Measures:

Assessment measures may include, but are not limited to exams, assignments and evaluation of nutrition counseling sessions.
